So if you know me, you know that I really do NOT like chicken nuggets. I don’t really know what it is, but I have never like them. But as I’ve grown older (or wiser), I have realized that chicken nuggets are really the best meal for kids. I always told myself that when my son gets to be chicken nugget-aged, I’ll make them myself without truly expecting that to happen any time soon.
Well, in August, my good friend who is also a food blogger brought up the idea of doing a “Kid Menu” collab on Instagram and I hastily signed up to make chicken nuggets. For weeks I looked around for recipes that would inspire me but I found nothing. Finally, the day I had to make them, I went to the store, bought some ingredients and came home to start making the nuggets. Of course, I didn’t use anything I bought at the store and threw together something randomly (but unlike what I would have done a year ago, I wrote down what I did). The end-result was AMAZING. So amazing, in fact, that my husband broke keto to eat them and between him, my sister and I, we ate all of the nuggets. My poor little guy didn’t even get one! Looks like I’ll be making these again often!

Preheat oven to 375
Mix together all ingredients with hands
Use oiled hands to form nuggets. Dip in the seasoned breadcrumbs.
Place on a foil-lined cookie sheet. Spray the tops of the nuggets with cooking spray.
Bake for 20 minutes or until golden brown.
Serve hot and with ketchup or sauce of your choice
