Lemon Paprika Salmon

I told you guys how I just like to throw things together, right? Well, this is for sure one of those recipes. My husband and I are doing Keto and today I just wanted something healthy, fresh and flavorful after a crazy weekend of eating meat! This was the perfect recipe! It was delicious, easy and so so fresh.

Tips and Tricks!

The most important thing to remember about salmon is that you don’t need to cook it for very long. My salmon filet was about 2 lbs and very thick, so I cooked it a bit longer than usual at 15 minutes and it was the perfect combination of flaky and moist.

I use chopped garlic in most of my salmon recipes and what I like to do is push the garlic into the salmon. Since the salmon is so soft already, it’s easy to immerse it with flavor with just a tiny bit of rubbing.

For the salsa-the avocados should not be hard but not be too ripe. You don’t want your salsa to turn into guacamole. So, make sure to mix it thoroughly but with a gentle hand.

Lemon Paprika Salmon
 2 lbs Salmon
 ½ cup Olive Oil
 ¼ cup Lemon Juice
 1 tsp Salt
 1 tsp Paprika
 1 tsp Cayenne Pepper
 ½ tsp Black Pepper
 ½ tsp Cumin
 1 clove garlic, chopped
 ½ Lemon, sliced
Avocado Salsa
 2 Avocados, chopped
 ½ Red onion, chopped
 ½ cup Cilantro, chopped
 ½ cup Olive Oil
 ¼ cup Lemon Juice
 Salt & Pepper, to taste

Preheat oven to 425 degrees and line a baking dish with parchment paper

Mix together all ingredients, except the lemon slices.

Rub it into the salmon really well, pushing the garlic into the salmon.

Line the top of the salmon with the lemon slices

Bake for 15 minutes

For more of a charred flavor, broil it for 5 minutes.

Serve warm with avocado salsa!

Toss together all ingredients softly in a bowl.

Keep refrigerated until ready to use.

Serve cool or room temperature!
