Deep Dish Pizza

Yields1 Serving

Crust
 1 packet yeast
 2 tbsp olive oil
 1 tsp salt
 3 cups all purpose flour
 1 cup slightly warm water
 ¼ cup slightly warm water
 1 tsp sugar
Tomato Sauce
 1 stick butter
 1 onion, chopped
 1.50 tsp salt
 1.50 tsp italian seasoning
 2 tsp paprika
 3 cloves garlic, sliced
 3 oz tomato paste
 1 can diced tomatoes
 ¼ tsp sugar
Assembly
 prepared tomato sauce
 2 cups parmesan cheese
 cast iron skillet

Part 1-prepare the dough

Mix together 1 cup water and yeast, set aside for 5 minutes.

Mix together flour, salt, olive oil, sugar and yeast.

Knead into a ball. Remove from bowl and knead for 5 minutes or until smooth.

Place the dough in a greased bowl, cover and set in an unheated oven for 1 hour to rise.

Part 2- Prepare the Sauce

White crust is rising prepare the sauce.

Melt butter in a pan.

Add onions and garlic and saute until fragrant.

Add tomato sauce and combine well. Add the salt, italian seasoning, sugar, and paprika. Mix well.

Add the diced tomatoes. Mix well. Let bubble for 2 minutes. Set aside until time to assemble.

Part 3- Prepare the Crust

After an hour of resting the dough, split it in half. Cover one of the balls and set aside or freeze for later (can freeze for 3 months).

Knead the dough for 1 minute and form into a large ball.

Using a combination of your hands and a rolling pin roll the dough. It should be about an inch bigger than the size of your skillet.

Grease your skillet well.

Press your dough into the skillet and up the walls. Trim any excess. Poke holes all over the dough. Set aside.

Preheat your oven to 450.

Put the skillet in the oven for just 5 minutes, or less. You want your dough to set.

Remove from the oven, carefully. It will be VERY hot.

Add cheese evenly to the skillet then cover with tomato sauce.

Place in the oven for 12-15 minutes, or until your crust is golden.

Enjoy hot!
