Smashed Potatoes with Red Mayo Sauce

Yields1 Serving

Potatoes
 6 russet potatoes
 1 tsp salt
 1 tsp garlic powder
 1 tsp italian seasoning
 1 tsp black pepper
 2 large handfuls of shredded parmesan cheese
Red Mayo Sauce
 ½ cup mayo
 2 tsp paprika
 2 tbsp lemon juice
 ½ tsp salt

Put washed potatoes in the IP for 10 min high pressure OR boil in pot for 15 minutes

Mix together 1 tsp salt, olive oil, black pepper, garlic powder.

Once potatoes are soft, cut them in half. Place the flat side down, skin side up.

Use a potato masher, or bowl, to flatten the potato

5

Pour the olive oil mixture on top and bake at 375 for 15 minutes

Remove and sprinkle with cheese, put back in the oven until cheese melts.

7

Mix together ingredients for the sauce and drizzle over the potatoes.
Serve immediately
