Suleimani Tea

Yields1 Serving

 5 cups water
 1 tbsp grater ginger
 4 tsp ceylon tea
 2 tsp jaggery
 4 cardamom pods
 6 cloves
 1 cinnamon stick
 2 tsp lemon juice
 a pinch of saffron, optional

Roughly crush the cinnamon sticks, cloves and cardamom pods using a mortar and pestle.

Boil the tea, spices and ginger on medium heat for 2 boils.

Turn the heat down and add the jaggery, saffron and lemon juice.

Simmer for 2 to 3 minutes.

Strain and serve hot.
