Upma-Semolina Porridge

Yields1 Serving

 1.50 cups semolina
 3.50 cups water
 1.50 tsp salt, or more to taste
 cashews or peanuts (optional)
 1.50 tsp mustard seeds
 1 onion, chopped
 ½ cup curry leaves
 5 dried red chilis
 ¼ cup oil

In a saucepan heat up oil.

Once heated, add onions and fry until translucent.

Add curry leaves, mustard seeds, salt and dried red chillis. Combine well.

Add the semolina and roast well.

Add water and combine well. Mix well.

Once mixed thoroughly, cover, lower heat and steam until water is all dried. This takes about 10 minutes.

Serve hot with a chutney of your choice!
