Barbacoa-Style Beef

A few years ago, my cousin was coming over and sent me a recipe and said, “Nuni, can you make this for me?” I did and the rest is history. I’ve made this several times since then and every time, it’s a hit.

So, everyone who knows my cooking style knows I hate to read recipes or follow videos. I typically just look at the ingredients of a recipe and find my way. May not be the best way to cook, but it’s gotten me this far, I guess.

Typical barbacoa recipes use adobo chipotle peppers but the first time I made this, I didn’t have it and didn’t have time to buy it so I replaced it with jalapenos and it turned out awesome.

This was the first time I made this recipe in an Instant Pot. I typically use the slow cooker for 8 hours. I would say it turned out delicious both ways!

 1 lb boneless beef
 3 cups beef broth
 6 jalapeno peppers
 6 bay leaves
 6 cloves
 1 tsp dried oregano
 1 tsp dried basil
 2 tsp cumin powder
 2 tsp black pepper
 1 tbsp paprika
  cup lemon juice
 2 tsp salt
 ½ cup green onions
 3 cloves garlic

Sear the beef in a cast iron skillet for 1 minute on each side.

While searing the beef, start the sauce.

Turn Instant pot on saute mode and add all the ingredients. Allow to boil before adding in the seared beef.

Turn IP on high pressure for 60 minutes. Quick release pressure.

Turn IP on Saute mode. Remove beef from the pot and shred it. Allow water to dry.

Garnish with chopped green onions.

Serve warm with tortillas, cheese, sour cream and salsa!
