Chicken Cilantro Soup-Instant Pot

Yields1 Serving

 ½ lb boneless chicken
 1 onion, sliced
  cup oil
 1 tsp salt, more or less to taste
 1 tsp black pepper
 1 tsp cumin powder
 ¾ tsp garlic powder
 1 inch piece of ginger, peeled
 1 tbsp soy sauce (low sodium)
 1 tbsp lemon juice
 1 egg, whisked
 ½ cup cilantro, chopped

Turn IP on saute. Once hot, add oil, onions and chicken. Saute until chicken is white

Add salt, black pepper, cumin, garlic powder and the ginger. Mix well.

Add 6 cups of water, pressure cook on high for 10 minutes.

Remove the chicken and shred.

Remove the ginger and toss it out.

While shredding the chicken, add the cilantro and let the soup boil.

Add the whisked egg to the soup while mixing the soup vigorously.

Add the chicken, soy sauce and lemon juice. Allow it to boil 3 times.

Serve hot!
