Veggie Lo Mein

 16 oz spaghetti noodles (or egg noodles)
 3 cups veggies
 3 cloves garlic
 1 cup soy sauce
  cup oil
 ½ cup sriracha sauce

Boil noodles according to the package. Drain. Run cool water on them to stop the cooking process.

Chop up veggies. I used bell peppers, cabbage, onions but you can use anything frozen or fresh.

Heat oil in a wok or large fry pan.

Saute garlic for 2 minutes. (I like my cloves smashed, not chopped. Do it however you would like).

Add onions, saute until translucent.

Add the veggies. Saute until slightly softened, you want them to remain fairly crunchy.

Push the veggies aside and add the sauce in the open space. Mix them up really well. Don't mix the veggies in just yet.

Add in the noodles and mix everything together well.

Turn down the heat. Cover and let all the flavors infuse. This should take about 5 minutes.

Serve hot.
